Fusion uses dry steam combined with high-temperature air. This combination makes it possible to transfer heat with precision and uniformity, maintaining 100% relative humidity to prevent the product from drying out during the process.
This method harnesses the condensed latent heat of 539 kcal/kg to achieve extraordinarily fast and consistent thawing. The result is a much more faithful recovery of texture, color, and flavor, with minimal dehydration, strong sanitary conditions, and better use of the product.

Together with Proton, Fusion completes a freezing and thawing logic designed to preserve quality from beginning to end. Proton protects the product's structure during freezing through the formation of nanocrystals that prevent the cellular damage associated with traditional methods.
